Easy Fudgy Cream Cheese Brownies

Rich fudgy chocolate brownies swirled with a velvety cream cheese filling for a decadent treat.

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 ounces full-fat cream cheese, softened
  • 1/4 cup full-fat sour cream
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (177°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Melt butter in a saucepan over medium heat, remove from heat and stir in granulated sugar until combined.
  3. Whisk eggs into the butter and sugar mixture one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Fold dry ingredients into the wet mixture until just combined; set aside about 1/4 of the batter.
  6. Pour 3/4 of the brownie batter into the prepared pan and spread evenly.
  7. In a medium bowl, mix softened cream cheese, sour cream, sugar, and vanilla extract until smooth.
  8. Spoon the cream cheese mixture over the brownie batter in dollops and gently spread or swirl it using an offset spatula.
  9. Drop spoonfuls of the reserved brownie batter over the cream cheese layer and gently swirl with a knife to create marbling.
  10. Bake for 30-33 minutes or until a toothpick inserted comes out with moist crumbs.
  11. Cool completely before cutting into squares and serving.

Notes

Use full-fat cream cheese and sour cream for best texture. Avoid overmixing the batter to keep brownies fudgy. Assemble quickly as brownie batter thickens as it sits.
