For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mixed fresh fruits (strawberries, kiwi, blueberries, mango)
- 1/4 cup apricot jam (for glaze)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
- Bake for 30 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours.
- Arrange sliced fruits on top of the cheesecake. Heat apricot jam and brush lightly over fruits for a glossy finish.
