Frito Pie

A Frito Pie recipe loaded with seasoned ground beef, sweet onions, tomatoes, beans, and Fritos all topped with Cheddar and Monterey Jack cheeses and baked to golden perfection.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons taco seasoning
  • 1 tablespoon chili powder
  • 1/2 cup water
  • 1 (10 ounce) can mild Rotel diced tomatoes
  • 1 (15 ounce) can kidney beans, drained
  • 45 cups Fritos corn chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, sliced
  • Sour cream (for serving)
  • Diced tomatoes (for serving)
  • Chopped cilantro (for serving)

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large skillet over medium heat, brown ground beef. Drain excess grease.
  3. Stir in taco seasoning, chili powder, water, Rotel tomatoes, and kidney beans. Simmer for about 10 minutes.
  4. Layer about 2 cups of Fritos in the bottom of a greased casserole dish.
  5. Spoon half the ground beef mixture over the Fritos layer.
  6. Sprinkle half the cheddar cheese and Monterey Jack cheese on top.
  7. Add 2 more cups of Fritos, then the remaining meat and bean mixture.
  8. Top with the remaining Fritos and cheeses.
  9. Bake for about 20 minutes or until cheese is melted and casserole is hot.
  10. Serve immediately topped with green onions, sour cream, diced tomatoes, and cilantro.

Notes

Use mild or spicy Rotel depending on your heat preference. Adjust seasoning to taste. For a vegetarian version, substitute ground beef with meat alternative or extra beans.
