For the Crust:
- 4 bone-in pork chops (1 inch thick)
- 2 large yellow onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- 1 cup beef broth
- 1 cup shredded Gruyère cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Season pork chops with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chops for 3-4 minutes per side until browned. Remove and set aside.
- In the same skillet, melt butter and add onions. Cook for 15-20 minutes, stirring occasionally, until caramelized. Add Worcestershire sauce, thyme, and beef broth, scraping up browned bits.
- Return pork chops to skillet, nestling them into the onions. Top with shredded cheese. Cover and cook for 5-7 minutes until cheese melts and pork reaches 145°F internal temperature.
