For the Crust:
4 bone-in pork chops
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp butter
1 tsp Worcestershire sauce
1 cup beef broth
1 tsp thyme
1 cup shredded Gruyere cheese
Salt and pepper to taste
Instructions
1. Prepare the Crust:
Season pork chops with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chops for 3-4 minutes per side. Remove and set aside.
In the same skillet, melt butter and add onions. Cook for 15 minutes until caramelized, stirring occasionally.
Add garlic, Worcestershire sauce, thyme, and beef broth. Simmer for 5 minutes until slightly reduced.
Return pork chops to the skillet, spooning onions over them. Top with shredded Gruyere cheese.
Cover and cook on low heat for 5 minutes until cheese is melted and pork reaches 145°F internally.
