Apple Cider Donut Bread

A deliciously warm and spiced apple cider donut bread that captures the essence of fall with a soft, fluffy interior and a crunchy cinnamon-sugar crust. Perfect for breakfast, snacks, or dessert.

  • 1 cup apple cider
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup light brown sugar, lightly packed
  • 1 1/4 cup all purpose flour (plus 2 Tbsp.)
  • 2 tbsp cornstarch
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • For the cinnamon sugar topping:
  • 4 tbsp melted butter
  • 1/4 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Bring apple cider to a boil over medium-high heat and reduce by half to concentrate flavor. Let cool.
  3. In a medium bowl, whisk together melted butter and brown sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream and vanilla extract.
  6. In a separate bowl, sift together flour, cornstarch, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  7. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  8. Slowly fold in the reduced apple cider until batter is smooth.
  9. Pour batter into prepared loaf pan and bake for about 1 hour or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and let cool in pan for 10 minutes, then transfer to a wire rack.
  11. Brush the top of the warm loaf with melted butter.
  12. Mix sugar and cinnamon for the topping, then sprinkle generously over the buttered loaf, pressing lightly to adhere.
  13. Optionally repeat the butter and cinnamon sugar topping for a thicker crust.
  14. Allow bread to cool completely before slicing and serving.

Notes

Boiling the apple cider before adding it to the batter intensifies the apple flavor. The cinnamon sugar topping adds a delightful crunch that mimics classic apple cider donuts. Letting the bread cool before slicing helps maintain its structure.
