A delicious and easy-to-make enchilada casserole with layers of tortillas, cheese, and a savory filling.

For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Stir in enchilada sauce, green chilies, black beans, corn, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
- Layer half of the tortillas in the bottom of a greased 9×13-inch baking dish. Top with half of the beef mixture and half of the cheese.
- Repeat layers with remaining tortillas, beef mixture, and cheese.
- Bake for 20-25 minutes, until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
