For the Crust:
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter
1 cup water
1/4 cup cocoa powder
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1 ripe banana, mashed
1/2 cup creamy peanut butter
1/2 cup chopped pecans (optional)
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a saucepan, melt butter with water and cocoa powder over medium heat, stirring until smooth. Pour over dry ingredients and mix well.
Add buttermilk, eggs, vanilla, and mashed banana. Stir until combined.
Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
While cake is baking, prepare the peanut butter glaze: In a small saucepan, melt peanut butter with 1/4 cup butter and 1/4 cup milk over low heat, stirring until smooth. Pour over warm cake and sprinkle with pecans if desired.
