Ingredients

Scale
  • 2 tablespoons butter
  • 2 large onions, sliced 1/4-inch thick
  • 2 pressed garlic cloves
  • 2 (14 ounce) cans beef broth
  • 1 (10 1/2 ounce) can beef consommé
  • 1 dash Worcestershire sauce
  • 1 cup shredded Swiss cheese
  • 4 slices toasted French bread

Instructions

  1. Place onions and butter in a saucepan and sauté on medium heat until onions are tender.
  2. Add garlic and sauté 1-2 minutes without letting the garlic burn.
  3. Add beef broth, consommé, and Worcestershire sauce and bring to a boil for 1 minute.
  4. Take oven-proof bowls and place 1/8 cup of cheese in the bottom of each bowl.
  5. Ladle the soup over the cheese, then top each bowl with a slice of toasted French bread and more cheese.
  6. Place under a broiler until the cheese is melted and bubbly.

Notes

For best flavor, use good quality beef broth and consommé. Avoid burning the garlic during sautéing. Use oven-proof bowls or mugs for broiling the cheese topping.
