Easy Enchiladas Ground Beef Soup

A quick and easy beef enchilada soup filled with ground beef, beans, corn, and enchilada sauce, perfect for a comforting family meal.

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup enchilada sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (4 oz) can diced green chiles
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until no longer pink. Drain excess fat.
  2. Add diced onion and cook until softened, about 3-4 minutes.
  3. Stir in taco seasoning and cook for 1 minute to release flavors.
  4. Pour in beef broth, enchilada sauce, diced tomatoes, corn, black beans, and green chiles. Stir to combine.
  5. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes to blend flavors.
  6. Season with salt and pepper to taste.
  7. Serve hot with optional toppings such as shredded cheese, sour cream, cilantro, or jalapeños.

Notes

This soup is easy to prepare in one pot and can be made ahead and frozen for convenience. Leftovers reheat well and make a great lunch or dinner option.
