Dorito Chicken Casserole

Easy Dorito Chicken Casserole is a comforting dish featuring shredded chicken mixed with sour cream, cream of chicken soup, Rotel (diced tomatoes with green chilies), corn, spices, and cheese, layered with crushed Nacho Cheese Doritos and baked until bubbly and golden.

  • 3 cups cooked and shredded chicken breast
  • 15 ounce bag Nacho Cheese Dorito chips
  • 1 cup sour cream
  • 20 ounces (2 cans) cream of chicken soup
  • 10 ounces Rotel (diced tomatoes with green chiles), drained
  • 15 ounces canned corn, drained (or 1.5 cups frozen/fresh)
  • 1 cup freshly grated cheddar cheese
  • 1 cup freshly grated Monterey Jack cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Optional garnish: fresh diced tomatoes and thinly sliced green onions

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9×13-inch baking dish with nonstick cooking spray.
  2. Crush the Dorito chips and spread half of them in the bottom of the casserole dish.
  3. In a large mixing bowl, combine sour cream, cream of chicken soup, Rotel, corn, cumin, chili powder, and half of each cheese. Fold in the shredded chicken until well combined.
  4. Spread the chicken mixture evenly over the Doritos layer in the casserole dish.
  5. Top with the remaining crushed Doritos and sprinkle with the remaining cheese.
  6. Bake for 25 minutes until bubbly and cheese is melted. Let rest for 5-10 minutes before serving.
  7. Garnish with fresh diced tomatoes and green onions if desired.

Notes

For best texture, do not try to spread the chicken mixture roughly; gently place it over the chips to avoid lifting the bottom layer. You can substitute Monterey Jack with other melty cheeses like Colby Jack if preferred. Using a rotisserie chicken saves preparation time.
