Diwali Special Soft & Fluffy Malpua Recipe

Celebrate Diwali with this delectable Indian dessert that combines crispy edges with a soft center, served in a sweet sugar syrup or with creamy rabri.

  • 1 cup Maida (All-purpose flour)
  • ยฝ cup Rava (Semolina)
  • ยผ cup Sugar
  • ยฝ tsp Fennel powder
  • ยผ tsp Cardamom powder
  • ยฝ cup Milk or Rabri
  • Water as needed
  • Oil or Ghee for frying
  • 1 cup Sugar for sugar syrup
  • ยฝ cup Water for sugar syrup
  • ยผ tsp Cardamom powder for syrup
  • Few threads Saffron (optional)
  • Chopped nuts for garnishing

Instructions

  1. In a large mixing bowl, combine flour, semolina, sugar, fennel powder, and cardamom powder.
  2. Add milk or rabri and mix well to form a smooth batter without lumps. Add water if needed.
  3. Rest the batter for 30 minutes.
  4. Heat oil or ghee in a deep pan and pour the batter into it once hot.
  5. Fry the malpuas until they start to float, then gently press them with a perforated spoon and splash oil over them.
  6. Cook both sides until golden brown.
  7. Soak the fried malpuas in hot sugar syrup for 10 minutes.
  8. Serve hot with rabri and garnish with chopped nuts.

Notes

Ensure the batter is of smooth pouring consistency for best results. Adjust the amount of sugar syrup to balance sweetness, and use nuts like almonds or pistachios for garnish.
