Diwali Special Khari Namkeen Recipe

A crispy, flaky, and perfectly spiced Namkeen Khari – a delicious tea-time snack for Diwali celebrations.

Ingredients

  • 2 cups plain flour (maida)
  • 1 tsp salt
  • 1 1/2 tsp vinegar
  • 1 1/2 tsp gluten
  • 3/4 cup Lily puff margarine
  • 1 cup ice-cold water (approx.)
  • Plain flour (maida) for dusting

Instructions

  1. Combine maida, salt, vinegar, and gluten in a bowl. Mix well and knead into a stiff dough using ice-cold water.
  2. Stretch the dough for 10 to 15 minutes on a clean surface, then fold it in half and bring both sides together.
  3. Overlap the two folded sides to form a book, wrap with cling wrap, and refrigerate for 15 minutes.
  4. Roll the dough into a 10” x 6” rectangle, trim the edges, and cut into 1-inch wide pieces.
  5. Cut each piece into two, yielding 16 khari biscuits in total.

Notes

To achieve flaky layers, keep the margarine cold and handle the dough gently. Refrigerating the dough helps in flaky pastry formation.
