Diwali Special Dry Fruit Barfi

A nutritious and delicious dry fruit barfi made with dates, anjeer (dry figs), assorted nuts, and aromatic spices, perfect as a Diwali special sweet treat.

Ingredients

  • 1 tsp ghee
  • ½ cup almonds, chopped
  • ½ cup cashews, chopped
  • ¼ cup walnuts, chopped
  • 3 tbsp pumpkin seeds
  • 3 tbsp pistachios, chopped
  • 2 tbsp sunflower seeds
  • 1.5 cup seedless dates
  • 1 tsp ghee (additional)
  • 2 tbsp anjeer (dry figs), chopped
  • 2 tbsp raisins
  • ½ tsp cardamom powder

Instructions

  1. Heat 1 tsp ghee in a pan. Add almonds, cashews, walnuts, pumpkin seeds, pistachios, and sunflower seeds.
  2. Roast on low flame until the nuts turn crunchy. Set aside.
  3. Pulse the dates in a mixer grinder to form a smooth paste.
  4. Heat 1 tsp ghee in a large pan, add chopped anjeer and raisins, and roast until aromatic.
  5. Add the ground dates paste and cook on medium flame, mashing and stirring until the paste turns glossy.
  6. Add the roasted nuts and cardamom powder, mix well until combined and the mixture holds shape.
  7. Cool slightly then shape into small ladoos or roll into a cylindrical log over poppy seeds.
  8. Wrap in aluminum foil, refrigerate for 2 hours, then cut into thick slices.
  9. Store and enjoy for up to a month.

Notes

Use pulse mode while grinding dates to avoid mixer jamming. Refrigeration helps the barfi set firmly. You can customize the nuts based on availability but maintain the balance with dates.
