Desi Red Sauce Pasta

A flavorful Indian-style red sauce pasta combining classic Italian pasta with a spicy, tangy homemade tomato sauce tailored for Indian taste buds.

  • 200 grams pasta (penne or macaroni)
  • 3 large tomatoes, pureed
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1/2 cup capsicum, chopped
  • 1/2 cup carrot, chopped
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon black pepper powder
  • 1 teaspoon mixed Italian herbs
  • 1 tablespoon tomato ketchup
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Grated cheese (optional)

Instructions

  1. Boil pasta in salted water until al dente, drain and keep aside.
  2. Heat oil in a pan, add chopped onions and sauté until translucent.
  3. Add ginger-garlic paste and green chilies; sauté for 1-2 minutes until raw smell disappears.
  4. Add chopped capsicum and carrot; cook for 3-4 minutes until slightly tender.
  5. Pour in the tomato puree and cook on medium heat until oil separates from the sauce.
  6. Add red chili powder, black pepper powder, Italian herbs, tomato ketchup, and salt; mix well.
  7. Simmer the sauce for 5 minutes, stirring occasionally.
  8. Add the boiled pasta to the sauce and toss well to coat evenly.
  9. Cook together for 2-3 minutes to blend flavors.
  10. Garnish with fresh coriander leaves and grated cheese if desired. Serve hot.

Notes

Use fresh tomatoes for the best flavor. Adjust chili levels according to your spice preference. Adding grated cheese on top enhances creaminess and taste.
