Desi Red Sauce Pasta

A flavorful Indian-inspired version of classic Italian red sauce pasta, combining rich tomato sauce with spices tailored for the desi palate, perfect for a quick, comforting meal.

  • 200 grams pasta (penne or macaroni)
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 capsicum (bell pepper), chopped
  • 2 tomatoes, pureed
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt to taste
  • 1 tablespoon tomato ketchup
  • 1/2 cup fresh cream or milk
  • Fresh coriander leaves for garnish

Instructions

  1. Boil pasta in salted water until al dente, drain and set aside.
  2. Heat oil in a pan, add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until translucent.
  4. Add ginger-garlic paste and sauté for a minute until raw smell disappears.
  5. Add chopped capsicum and cook for 2 minutes.
  6. Pour in tomato puree, cook until oil separates from the mixture.
  7. Add red chili powder, garam masala, oregano, basil, and salt; mix well.
  8. Add tomato ketchup and mix thoroughly.
  9. Slowly add fresh cream or milk, stir to combine and simmer for 2-3 minutes.
  10. Add cooked pasta to the sauce, toss well to coat the pasta evenly.
  11. Garnish with fresh coriander leaves and serve hot.

Notes

Ensure the pasta is cooked al dente to avoid mushiness when sautéed with the sauce. Adjust chili powder as per desired spice level. Fresh cream adds richness, but milk can be used for a lighter version.
