Wacky Cake (Depression Cake)

A moist and delicious cake made without milk, eggs, or butter, originating from the Great Depression era.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup water
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C). Grease two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together water, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.

Notes

This cake is a classic example of resourcefulness during hard times. It can be made into cupcakes by baking for 15-20 minutes. For an extra boost, substitute water with brewed coffee.
