Moist and Fluffy Marble Cake

A moist and fluffy marble cake made with a vanilla batter swirled with chocolate for a beautiful marbled effect. Perfect for layer cakes or bundt pans with professional texture and flavor.

Ingredients

  • 16 ounces cake flour
  • 16 ounces granulated sugar
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 teaspoon baking soda
  • 4 large eggs, room temperature
  • 5 ounces vegetable oil
  • 14 ounces buttermilk, room temperature or slightly warm
  • 8 ounces unsalted butter, softened
  • 2 teaspoon vanilla
  • ½ teaspoon almond extract
  • 1 ounce cocoa powder, dutch or natural
  • 3 ounces hot water
  • 1 Tablespoon cocoa powder for dusting

Instructions

  1. Combine dry ingredients: 16 oz cake flour, 16 oz sugar, 1 tsp salt, 1 Tbsp baking powder, 1 tsp baking soda in mixer bowl. Mix on low to combine.
  2. Add 8 oz softened butter and mix on low until sandy texture. Add 5 oz vegetable oil and 14 oz buttermilk mixture, mix on low until moistened, then medium for 2 minutes. Add 4 eggs in three batches, mixing 15 seconds between, scrape bowl.
  3. Remove ⅓ batter (about 20 oz), mix with 1 oz cocoa powder dissolved in 3 oz hot water. Alternate spoonfuls of vanilla and chocolate batter into greased pans, swirl gently with knife. Bake at 350°F until done.

Notes

Mix batter on medium for exactly 2 minutes to develop structure and prevent collapse. Use room temperature ingredients for best emulsion. Dust pans lightly with cocoa for easy release.
