Light and refreshing cucumber tea sandwiches perfect for afternoon tea or brunch.

For the Crust:
- 8 slices white or whole wheat bread
- 1 large cucumber, thinly sliced
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 tbsp fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- In a small bowl, mix together cream cheese, butter, dill, salt, and pepper until smooth.
- Spread the cream cheese mixture evenly on all 8 slices of bread.
- Arrange cucumber slices in a single layer on 4 slices of bread, then top with the remaining slices to make sandwiches.
- Trim the crusts off each sandwich and cut into triangles or rectangles.
- Serve immediately or cover with a damp paper towel and refrigerate until ready to serve.
