Easy & Cozy Crockpot Potato Broccoli Cheddar Soup

A comforting and hearty crockpot soup with creamy texture, fresh broccoli, and rich cheddar cheese, perfect for cozy homemade meals and sneaking in vegetables.

  • 4 large russet potatoes, peeled and diced
  • 3 cups fresh broccoli florets
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk or heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: chopped chives, extra cheese, or bacon bits

Instructions

  1. Peel and dice the potatoes, chop the onion, and mince the garlic.
  2. Add potatoes, broccoli florets, onion, garlic, and broth to the crockpot.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until potatoes are tender.
  4. Use an immersion blender to blend the soup slightly, leaving some chunks for texture.
  5. Stir in the butter, milk or heavy cream, and shredded cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot with optional toppings like chopped chives, extra cheese, or bacon bits.

Notes

For a thicker soup, use heavy cream instead of milk. You can also add cooked bacon bits for extra flavor. Blending partially keeps a nice texture with chunks of potato and broccoli.
