Crockpot French Onion Meatloaf

A slow cooker meatloaf inspired by French onion soup, featuring caramelized onions cooked in the crockpot topped with melted Swiss or Gruyère cheese, offering a rich and savory meal.

  • 34 large sweet onions, sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • 1 pound ground beef
  • 1 cup Italian herb bread crumbs
  • 1 cup milk
  • 1 egg
  • 1 oz. package French onion soup mix
  • 1/2 cup cooking sherry
  • 1/2 teaspoon Worcestershire sauce
  • 4 oz Swiss Gruyère or provolone cheese
  • Fresh thyme sprigs for garnish

Instructions

  1. Slice onions and spread them in the bottom of a 6-quart slow cooker. Sprinkle salt, pepper, and sugar over the onions. Place butter and olive oil on top of the onions. Cook on LOW for 12 hours to caramelize.
  2. In a bowl, mix ground beef, bread crumbs, milk, egg, and French onion soup mix. Form the meat mixture into a loaf shape (ball or oval).
  3. Pour cooking sherry and Worcestershire sauce over the caramelized onions. Place the meatloaf on top of the onions in the slow cooker.
  4. Cook on HIGH for 3 hours or until the internal meat temperature reaches 160°F (71°C).
  5. Place cheese over the top of the meatloaf and continue cooking for 20-30 minutes longer until the cheese is melted.
  6. Serve the meatloaf sliced with onions and sauce spooned over the top. Garnish with fresh thyme.

Notes

1. Cooking the onions on LOW for an extended period brings out deep caramelized flavor. 2. Using cooking sherry and Worcestershire sauce enhances the richness and depth of the sauce. 3. For a shorter preparation, onions can be caramelized in a skillet before layering in the crockpot.
