Crockpot Bourbon Chicken with Brown Sugar

Tender chicken slow-cooked in a sweet and savory bourbon and brown sugar glaze, perfect for an easy and flavorful meal.

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup bourbon
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Green onions, sliced for garnish

Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, whisk together bourbon, brown sugar, soy sauce, ketchup, garlic, vinegar, ginger, and pepper. Pour over chicken.
  3. Cover and cook on low for 6 hours or high for 3 hours, until chicken is tender.
  4. Mix cornstarch and water in a small bowl to create a slurry. Stir into the crockpot and cook for an additional 15-20 minutes until sauce thickens.
  5. Garnish with sliced green onions before serving.
