Crock Pot Beef Stew

Description

This delicious beef stew is loaded with potatoes and carrots and slow cooked all day!


Ingredients

  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped

Instructions

  1. In a large bowl, combine flour, salt, and pepper. Add beef pieces and toss to coat.
  2. Place coated beef in the crock pot.
  3. Add remaining ingredients: beef broth, Worcestershire sauce, garlic, bay leaf, paprika, carrots, potatoes, and onion.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 10-12 hours or on high for 4-6 hours, until beef is tender.
  6. Remove bay leaf before serving.

Notes

For best results, brown the beef in a skillet before adding to the crock pot for deeper flavor. Stew can be stored in refrigerator for up to 4 days or frozen for up to 3 months. Thicken with cornstarch slurry if desired.
