Crispy Flatbread with Brie, Cranberries & Toasted Walnuts with a Hot Honey Drizzle

  • 1/4 cup honey
  • 1/41/2 tsp red pepper flakes
  • 2 flatbreads or naan
  • 6 oz brie cheese, sliced
  • 1/3 cup dried cranberries
  • 1/3 cup walnuts, toasted and roughly chopped
  • 1 Tbsp olive oil
  • 12 sprigs thyme, leaves picked

Instructions

  1. Combine honey and red pepper flakes in a small saucepan. Warm gently over low heat for 2-3 minutes, then remove from heat.
  2. Preheat oven to 400°F. Brush each flatbread lightly with olive oil and place on a baking sheet. Arrange brie slices evenly across flatbreads, then sprinkle with cranberries and toasted walnuts.
  3. Bake for 8-10 minutes or until brie is melted and flatbreads are crisp and golden. Drizzle generously with hot honey, garnish with fresh thyme leaves, slice, and serve warm.

Notes

Substitute dried cranberries with dates, apricots, or tart cherries, and walnuts with your preferred nuts. Use store-bought hot honey to save time. For extra crispiness, place flatbreads directly on the oven rack.
