  • 8 oz spinach
  • 1 cup heavy cream
  • ¼ teaspoon salt (for sauce)
  • 9 oz refrigerated 3-cheese tortellini
  • ¼ teaspoon black pepper (for serving)

Instructions

  1. Caramelize onions: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add thinly sliced onions and cook for 10 minutes, stirring constantly. Reduce heat to medium, add ¼ teaspoon salt, and cook for another 10 minutes until deeply browned. Set aside.
  2. Make creamy sauce: In the same skillet, heat 1 tablespoon olive oil over medium heat. Add sliced mushrooms and a pinch of salt; cook for 5 minutes until soft. Add spinach and stir on low heat until wilted. Return caramelized onions to the skillet. Pour in 1 cup heavy cream and ¼ teaspoon salt; bring to a quick boil then simmer for 2 minutes, stirring.
  3. Cook tortellini according to package instructions (about 7-10 minutes), drain, and add to the sauce. Stir on low heat for 2 minutes to combine. Serve topped with cracked black pepper.

Notes

Caramelized onions can be prepared 1-2 days in advance and stored in the fridge for easier meal prep. Use refrigerated tortellini for best texture; frozen works but may require extra cooking time. For a spicier version, add a pinch of red pepper flakes with the mushrooms.
