Creamy Potato & Hamburger Soup

A hearty and creamy soup combining ground beef, potatoes, and vegetables, perfect for a comforting meal.

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 cups grated cheddar cheese
  • 1 tsp salt
  • 1/2 tsp thyme leaves
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup frozen peas (optional)

Instructions

  1. In a large pot, cook the ground beef over medium heat without oil until browned. Remove and set aside.
  2. Add butter to the same pot and sauté the diced onions for 3-4 minutes until softened.
  3. Add minced garlic and cook for 30 seconds, stirring constantly.
  4. Stir in the flour and cook for 1 minute to form a roux.
  5. Gradually add beef broth while scraping the browned bits from the bottom of the pot.
  6. Bring to a boil, then add diced potatoes, thyme, smoked paprika, salt, and black pepper.
  7. Pour in the milk and heavy cream, bring back to a boil, and cook until potatoes are nearly tender.
  8. Add frozen peas or other vegetables if desired, and boil for an additional 5 minutes.
  9. Turn off heat and stir in grated cheddar cheese until melted and well combined.
  10. Serve hot.

Notes

Use freshly grated cheddar cheese for best melting results. You can substitute or add vegetables like corn or green beans for variety. Adjust seasoning to taste and consider using lean ground beef to reduce fat.
