For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
- Cook chicken for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute. Stir in pesto and heavy cream, then simmer for 3-4 minutes.
- Add Parmesan cheese and stir until melted. Return chicken to the skillet and coat with the sauce. Serve warm.
