For the Crust:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup basil pesto
1 clove garlic, minced
Instructions
1. Prepare the Crust:
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
In the same skillet, add garlic and sauté for 30 seconds until fragrant.
Reduce heat to low and stir in heavy cream, Parmesan cheese, and pesto. Simmer for 2-3 minutes until sauce thickens slightly.
Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes to heat through.
