For the Crust:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup basil pesto
- 1 clove garlic, minced
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Reduce heat to low and stir in heavy cream, Parmesan cheese, and pesto. Simmer for 2-3 minutes until sauce thickens slightly.
- Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes to heat through.
