For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Cook chicken in the skillet for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Reduce heat to medium and stir in pesto, heavy cream, and Parmesan cheese. Simmer for 3-4 minutes until sauce thickens.
- Return chicken to the skillet and coat with the creamy pesto sauce. Cook for another 2 minutes to heat through.
- Serve hot with pasta, rice, or a side of vegetables.
