For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Stir in pesto and heavy cream, mixing well.
  3. Return chicken to the skillet, spooning the sauce over the top. Sprinkle with Parmesan cheese and simmer for 2-3 minutes until the cheese melts and the sauce thickens slightly.
