For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Reduce heat to medium and stir in pesto and heavy cream.
- Add Parmesan cheese and stir until the sauce thickens slightly. Return chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes before serving.
