For the Crust:
4 boneless, skinless chicken breasts
1/2 cup basil pesto
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Prepare the Crust:
Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Reduce heat to medium and stir in pesto and heavy cream.
Add Parmesan cheese and stir until the sauce thickens slightly. Return chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes before serving.
