Creamy Parmesan Italian Sausage Ditalini Soup

A hearty and creamy Italian sausage soup with ditalini pasta, vegetables, and Parmesan cheese, perfect for a comforting meal.

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion, garlic, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add ditalini pasta and Italian seasoning. Reduce heat and simmer until pasta is tender, about 10 minutes.
  5. Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a thicker soup, reduce the amount of chicken broth or add more Parmesan cheese. You can substitute heavy cream with half-and-half for a lighter version. Leftovers store well in the refrigerator for up to 3 days.
