Delicious Ham and Potato Soup

  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 4 cups chicken broth
  • 2 cups diced cooked ham
  • 1 cup shredded cheddar cheese
  • 2 cups milk
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, celery, carrots, and garlic; cook until vegetables are tender, about 5 minutes.
  2. Stir in flour and cook for 1-2 minutes to form a roux.
  3. Gradually whisk in chicken broth and milk, stirring constantly to avoid lumps.
  4. Add diced potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Add diced ham and cook for an additional 5 minutes to heat through.
  6. Stir in heavy cream and shredded cheddar cheese until cheese is melted and soup is creamy.
  7. Adjust seasoning with salt and pepper as needed. Serve hot.

Notes

For extra richness, use half-and-half instead of milk. Leftover ham works great in this soup, making it a perfect way to use holiday ham. Garnish with extra cheese or chopped green onions for added flavor.
