For the Crust:
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 avocado, diced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine black beans, black-eyed peas, corn, red bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
- Pour the creamy dressing over the bean mixture and gently stir until well combined.
- Fold in diced avocado just before serving to prevent browning.
- Serve chilled with tortilla chips or as a side dish.
