For the Crust:

  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine black beans, black-eyed peas, corn, red bell pepper, red onion, and cilantro.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
  3. Pour the creamy dressing over the bean mixture and gently stir until well combined.
  4. Fold in diced avocado just before serving to prevent browning.
  5. Serve chilled with tortilla chips or as a side dish.
