Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

  • 12 oz Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons fresh thyme
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up, until browned and cooked through, about 6 minutes.
  2. Add the gnocchi, heavy cream, and chicken broth to the skillet. Increase heat to bring to a gentle boil, then reduce to medium and cover. Cook for about 5 minutes until gnocchi is tender and sauce begins to thicken.
  3. Stir in the butternut squash puree and minced garlic. Bring to a gentle boil again, then reduce heat and simmer until sauce reaches desired thickness.
  4. Remove from heat and stir in half of the chopped sage and thyme. Season with salt and pepper, keeping in mind the sausage adds saltiness.
  5. Garnish with the remaining sage and thyme before serving. Serve hot, optionally with crusty bread.

For best flavor, prepare the butternut squash puree in advance by roasting the squash. Adjust seasoning carefully as the sausage adds saltiness. This dish pairs well with crusty bread for soaking up the creamy sauce.
