Spinach Salad Recipe: A Fresh and Flavorful Addition to Any Meal
- 6 cups fresh spinach (washed and dried)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- ¼ cup walnuts or almonds (optional for crunch)
- ¼ cup feta cheese or vegan cheese (optional)
- 1–2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or maple syrup (optional)
- Salt and pepper, to taste
- Wash and dry the spinach. Slice the cherry tomatoes, cucumber, and red onion.
- Toast walnuts or almonds in a dry pan over medium heat for 2-3 minutes, until fragrant.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- In a large bowl, combine spinach, tomatoes, cucumber, and red onion. Add toasted nuts and cheese (if using). Drizzle with dressing and toss gently.
- Serve immediately or chill for 30 minutes before serving for the best flavor.
