Cranberry Pecan Chicken Salad

A delightful chicken salad with sweet dried cranberries, crunchy pecans, and a creamy dressing.

For the Crust:

  • 3 cups cooked chicken, shredded or diced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped and toasted
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine chicken, dried cranberries, pecans, celery, and red onion.
  2. In a separate small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

You can customize the seasonings to taste.
