Cranberry Glazed Chicken

A flavorful chicken dish featuring a tangy and sweet cranberry glaze, perfect for a festive meal or a special dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 400ºF (200ºC).
  2. In a small saucepan, combine cranberries, apple cider vinegar, brown sugar, grated ginger, and salt. Cook over medium heat until cranberries burst and sauce thickens, about 10 minutes.
  3. Heat olive oil and butter in a skillet over medium-high heat. Add minced garlic and sauté for 1 minute.
  4. Add chicken breasts to the skillet and sear until golden brown on both sides, about 3-4 minutes per side.
  5. Transfer chicken to a baking dish and spoon cranberry glaze over each piece.
  6. Bake in preheated oven for 15-20 minutes, or until chicken is cooked through and juices run clear.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For best results, use fresh cranberries and adjust sweetness by adding more or less brown sugar. This dish pairs well with rice or roasted vegetables.
