Cranberry Cheesecake Pie

A delicious cranberry cheesecake pie featuring a crumbly crust, creamy cheesecake filling, and a bright cranberry topping with lemon zest and juice.

  • 8 ounces (226 g) cranberries
  • 6 tablespoons (75 g) granulated sugar
  • 1/2 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 cup (120 ml) water
  • 1 1/4 cups (150 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113 g) unsalted butter, cold and cut into 1/2-inch cubes
  • 8 ounces (226 g) cream cheese, softened
  • 1/2 cup (100 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and salt. Add cold butter and mix with a pastry blender or fork until crumbly and it holds together when pinched.
  3. Set aside 1/2 cup of the crust mixture for topping. Transfer remaining mixture to a 9-inch pie pan and press firmly and evenly. Bake for 10 minutes, then cool slightly.
  4. Combine cranberries, sugar, lemon zest, lemon juice, and water in a saucepan. Cook over medium heat until cranberries burst and filling thickens, about 10 minutes. Remove from heat and cool slightly.
  5. Beat cream cheese and sugar on medium speed until light and fluffy. Add egg and vanilla extract and mix until smooth.
  6. Pour cheesecake filling over cooled crust and spread evenly.
  7. Drop cranberry filling by teaspoonfuls over cheesecake filling, leaving about a 1/2-inch border around edges.
  8. Sprinkle reserved crust crumbs evenly over the cranberry layer.
  9. Bake the pie at 350°F (175°C) for 30-35 minutes until the crust topping is lightly browned and filling is set.
  10. Cool completely before serving. Refrigerate to chill fully.
