Hearty Beef and Bean Chili

A cozy, flavorful chili packed with tender beef, beans, and a blend of spices, perfect for warming up on chilly days.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, chopped green onions

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add chopped onion, garlic, and green bell pepper; cook until vegetables are softened, about 5 minutes.
  4. Stir in chili powder, cumin, smoked paprika, and cayenne pepper; cook for 1 minute until fragrant.
  5. Add crushed tomatoes, kidney beans, black beans, and beef broth; stir to combine.
  6. Bring the chili to a boil, then reduce heat to low and simmer uncovered for 30-40 minutes, stirring occasionally.
  7. Season with salt and black pepper to taste.
  8. Serve hot with optional toppings as desired.

Notes

For a thicker chili, simmer longer to reduce the liquid. Adjust the cayenne pepper to control the heat level. Leftovers taste even better the next day.
