Cozy Fall Potato Soup

A warm and comforting potato soup perfect for cozy fall nights, ready in just 30 minutes with simple ingredients like potatoes, bacon, onions, and cheddar cheese.

  • 6 slices bacon
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 4 cups chicken stock
  • 4 large potatoes, peeled and diced
  • 1 cup diced ham (optional)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving bacon fat in the pot.
  2. Add butter, diced onion, and carrots to the pot. Cook until softened, about 5 minutes.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add diced potatoes and chicken stock to the pot. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  6. Stir in diced ham if using, and cook for an additional 5 minutes.
  7. Ladle soup into bowls and top with shredded cheddar cheese and crispy bacon pieces.
  8. Serve hot and enjoy.

Notes

For a creamier texture, you can mash some of the potatoes in the soup or add a splash of cream. Adjust salt and pepper to taste. Leftovers reheat well and flavors deepen overnight.
