Description

A hearty, rustic stew with ground beef, beans, and vegetables, simmered to perfection with a rich tomato base and smoky seasonings.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add diced onion, minced garlic, and chopped bell pepper. Sauté until vegetables are softened, about 5 minutes.
  3. Stir in tomato paste, smoked paprika, and chili powder. Cook for 1 minute until fragrant.
  4. Pour in beef broth and diced tomatoes. Bring to a simmer.
  5. Add kidney beans and corn. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
  6. Season with salt and pepper to taste. Serve hot.
