Cowboy Beans

Description

A hearty and flavorful dish of beans cooked with ground beef, bacon, and a sweet and tangy sauce.

For the Crust:

  • 1 lb ground beef
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pan.
  2. Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in the pinto beans, kidney beans, cooked bacon, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, garlic powder, salt, and pepper.
  5. Simmer the mixture over low heat for 20-25 minutes, stirring occasionally, until the flavors are well combined and the sauce has thickened.
  6. Serve hot, garnished with additional bacon if desired.

Notes

You can customize the seasonings to taste.
