Cowboy Beans

  • Author: Dorothy Miler

Description

A hearty and flavorful dish of beans cooked with ground beef, bacon, and a sweet and tangy sauce.

Ingredients

Scale

For the Crust:

  • 1 lb ground beef
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) pork and beans
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  2. Add the ground beef to the skillet and cook until browned. Drain excess fat.
  3. Add the diced onion and bell pepper to the skillet with the beef. Cook until vegetables are softened, about 5 minutes.
  4. Stir in the pork and beans, kidney beans, black beans, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, garlic powder, salt, and pepper.
  5. Bring the mixture to a simmer, then reduce heat to low. Cover and let cook for 20-25 minutes, stirring occasionally.
  6. Stir in the cooked bacon before serving.

Notes

You can customize the seasonings to taste.
