Corn Casserole

A creamy, cheesy corn casserole that is a perfect side dish for any holiday or family dinner.

Ingredients

  • 1 can (15.25 ounces) whole kernel corn, drained
  • 1 can (14.75 ounces) cream-style corn
  • 1 package (8.5 ounces) corn muffin mix
  • 1 cup sour cream
  • 1/2 cup (1 stick) butter, melted
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine whole kernel corn, cream-style corn, corn muffin mix, sour cream, melted butter, and shredded cheddar cheese. Mix well.
  3. Pour mixture into a greased 9×13-inch baking dish.
  4. Bake uncovered for 45 to 55 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  5. Let stand for 5 minutes before serving.

Notes

For a richer flavor, use sharp cheddar cheese and add a pinch of cayenne pepper for a slight kick. This casserole can be prepared a day ahead and baked just before serving.
