Corn Casserole

A creamy, cheesy corn casserole that is a perfect side dish for any meal, combining whole kernel corn, creamed corn, and cornbread mix for a comforting and easy-to-make dish.

  • 1 cup whole kernel corn, drained
  • 1 cup creamed corn
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 package (8.5 oz) Jiffy corn muffin mix
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1/4 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine whole kernel corn, creamed corn, sour cream, melted butter, and eggs. Mix well.
  3. Add the Jiffy corn muffin mix, sugar, and shredded cheddar cheese to the bowl. Stir until all ingredients are well combined.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. Bake in the preheated oven for 45 to 50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let the casserole cool for 5 minutes before serving.

Notes

For a richer flavor, use sharp cheddar cheese and consider adding a pinch of cayenne pepper for a slight kick. This casserole can be prepared a day ahead and reheated before serving.
