Coffee Cookies

Soft and chewy coffee cookies filled with rich and buttery coffee flavor, resembling espresso-infused sugar cookies.

Ingredients

  • 2 Tablespoons instant coffee
  • 1 Tablespoon warm water
  • 3/4 cup light brown sugar
  • 1/4 cup white granulated sugar
  • 1/2 cup unsalted butter (1 stick), melted and cooled slightly
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. In a small bowl, dissolve the instant coffee granules in the warm water and then set aside.
  3. Mix together the sugars and melted butter in a large bowl with an electric mixer over medium speed for 1-2 minutes.
  4. Add the egg and vanilla and mix until smooth, then add the dissolved coffee.
  5. Sift the flour, cornstarch, baking soda, and salt into the batter, then use a rubber spatula to fold all of the ingredients together by hand.
  6. Use a cookie scoop or spoon to scoop out the dough onto the parchment paper lined baking sheet.
  7. Bake in the preheated oven for 10-12 minutes until edges are just starting to crisp.
  8. Remove from the oven and allow cookies to cool slightly before transferring to a wire rack.

Notes

For best flavor, use instant coffee dissolved in warm water to infuse the dough. Baking at a lower temperature helps keep the cookies soft and chewy with crisp edges.
