For the Crust:
- 2 cans (13.5 oz each) full-fat coconut milk
- 1/2 cup granulated sugar
- 1/4 cup lime juice (about 2–3 limes)
- 1 tbsp lime zest
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a medium bowl, whisk together coconut milk and sugar until sugar is fully dissolved.
- Add lime juice, lime zest, vanilla extract, and salt. Stir until well combined.
- Pour mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
- Transfer to a freezer-safe container and freeze for at least 4 hours or until firm.
