For the Crust:
- 2 cups full-fat coconut milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup lime juice (freshly squeezed)
- 1 tbsp lime zest
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a medium bowl, whisk together coconut milk, heavy cream, and sugar until the sugar is fully dissolved.
- Add lime juice, lime zest, vanilla extract, and a pinch of salt. Stir well to combine.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
- Transfer to a freezer-safe container and freeze for at least 4 hours before serving.
