The Best Mashed Potatoes

A creamy, flavorful mashed potato recipe featuring Yukon Gold potatoes, butter, Parmesan cheese, cream cheese, garlic, and fresh chives, perfect for holiday meals or any occasion.

  • 5 pounds Yukon Gold potatoes, peeled and quartered
  • Salt, to taste (for boiling and seasoning)
  • 34 cloves garlic, minced
  • 1 cup fresh chives, finely chopped
  • 1/2 cup butter, softened or room temperature
  • 2 cups grated Parmesan cheese
  • 1 1/2 cups cream cheese
  • Freshly ground black pepper, to taste

Instructions

  1. Peel and quarter the Yukon Gold potatoes.
  2. Place potatoes in a pot and cover with cold water. Add a couple tablespoons of salt.
  3. Bring water to a boil, then reduce heat to medium and simmer until potatoes are tender but still firm, about 10-12 minutes.
  4. While potatoes cook, mince garlic and finely chop fresh chives.
  5. Drain potatoes and return them to the pot over low heat. Allow potatoes to dry for about one minute.
  6. Quickly add softened butter, grated Parmesan cheese, cream cheese, minced garlic, and chopped chives to the potatoes.
  7. Mash the mixture quickly using a potato masher until smooth and creamy.
  8. Season with salt and freshly ground black pepper to taste.
  9. Garnish with additional chives and pepper if desired.

Notes

For a delicious variation, serve mashed potatoes in a casserole dish, refrigerate leftovers overnight, then sprinkle extra Parmesan cheese and dot with butter before reheating in the oven.
